Shallow-fried Stuffed Dough Stick with Prawn Paste

Youtiao or Dough Stick is a popular food that people often eat it with congee or as a snack with soy milk. This version, is filled with prawns to elevate and create a Prawn Stuffed Fried Dough Stick.
Yield: 4 potions
Ingredients:
1 pair Deep-Fried Dough Stick (Yo Tiao)
Prawn Paste:
150 gms Shelled Prawns, minced
30 ml Diced Celery, fine dice
2 ml Salt
1 pinch Ground White Pepper
Dipping Sauce:
60 ml Water
30 ml Vinegar
15 ml Sugar
15 ml Ketchup
2.5 ml Caltrop Starch (Water Chestnut Starch)
Cooking Method:
Combine ingredients for Prawn paste till consistent.
Separate the dough sticks and cut into 6 - 8 cm pieces.
Scrape out the soft part from dough stick and stuff in the prawn paste.
Heat oil in a pan or wok. Shallow-fry the stuffed dough sick until fillings are done and the skin is crispy.
Bring the dipping sauce to the boil. Serve with the stuffed dough stick.
