Gluten-Free Plum Clafoutis

Ingredients

  • Plums 500g, red, pitted and halved or quartered

  • Margarine 2 tbsp, dairy free, melted

  • Coconut palm sugar 110 g

  • Eggs 3pc

  • Coconut milk 225 ml

  • Vanilla extract 1 tsp

  • Cornflour 25 g (cornstarch)

Cooking Method

To prepare plum clafoutis first heat the oven to 190°C (170° fan).

Grease 4 individual, flan dishes.

Place the plums skin side down in the baking dishes. Set aside.

Whisk together the eggs and coconut palm sugar until combined.

Add the coconut milk, vanilla and melted margarine and whisk until well blended.

Gradually whisk in the cornflour until smooth.

Pour the batter over the plums and bake for about 20 minutes until lightly browned and set in the centre.

Cool the plum clafoutis for 5-10 minutes before serving with soya yogurt.
