Turkish Tarhana Soup with Turkish Sausage

Ingredients:

450 gr tarhana

75 gr tomato paste

350 gr turkish sausage

2 teaspoon sweet red pepper powder

6 lt chichen stock

175 gr onions, chopped

80 gr butter

25 ml sherry vinegar

25 gr pommegrenate molasses

2 teapoon sea salt

Pinch of fresh black pepper

50 ml chilli oil

Pinch of dried oregano

Method:

Saute the turkish sausages with 100 gr of butter. Set a side. Add the onions to the pot and saute until translucent. Deglaze with vinegar. Add the tomato paste and pomegrenate molasses. Add stock and tarhana. Whisk to avoid lumps. Bring to boil, turn down to simmer. Simmer for 10-15 minutes. Pour the soup into the soup bowls. Add the sausage. Sprinkle dried oregano. Drizzle chillli oil and serve.
